5 Simple Spaghetti Squash Meal Prep Ideas

It’s the perfect veggie for when you want pasta but want to keep it low carb. Switch up your spaghetti squash meal prep with these different flavors! Spaghetti Squash Meal Prep
Spaghetti squash is super easy to prep however it does take some time if you’re doing it in the oven. I like to microwave my spaghetti squash for 5-8 minutes (a few minutes at a time, checking and flipping over). I’ve actually microwaved it for too long and it’s exploded in my microwave so warning!! Also, don’t forget to poke holes it your spaghetti squash before you microwave.
You’ll know your spaghetti squash is done in the microwave when you can cut it with a knife and it’s not a struggle to cut. Cut your spaghetti squash long ways and scrape out the seeds. Season the inside of the squash with olive oil, salt and pepper. Place the spaghetti squash cut side down on a baking sheet. Bake at 375 degrees for 30-45 minutes depending on it’s size. You’ll know it’s done when you can use a fork to scrape out the long strands of “spaghetti” and it comes out easy.
Spaghetti Squash Prep Instructions:
- Poke holes (I use a fork) all over your spaghetti squash.
- Microwave for 5-8 minutes (for a couple minutes at a time, check and flip over)
- Use a sharp knife to cut long ways and scrape out seeds.
- Season with olive oil, salt and pepper
- Place face down on a baking sheet and bake at 375 degrees for 30-45 minutes
You’ll know it’s done when you can use a fork to scrape out the “spaghetti” and it comes out easy.

If you’re prepping these to use another day, wait to scrape the “spaghetti”. Just cook, place in an airtight container in the fridge and then when you’re ready to use, just heat through and scrape out your spaghetti strands.
1. Pesto Bake
If I had to choose this pesto bake is my favorite spaghetti squash recipe! It’s one of the best easy recipes and perfect for meal prep or as a side for dinner.
Simply prep your spaghetti squash (instructions above) string your spaghetti with a fork from your squash and add your pesto. You can eat it just like that (don’t forget to add parmesan) OR my favorite way to eat this it to turn it into a bake. Once you have your spaghetti mixed with pesto, add to a baking dish or you can bake right in the skin of the squash. Sprinkle parmesan cheese on top. Bake until your cheese is melted and then broil until cheese is browned. Enjoy!
2. Spaghetti Bake
This is your classic spaghetti! I like to brown either lean ground turkey or ground beef (if I’m feeling fancy, I’ll even sauté some onions before!) Then I add a cup marinara and let the sauce flavors meld together. My favorite marinara sauce comes from Primal Kitchen. It has super clean ingredients and tastes delicious. Once you’ve made your sauce, mix your spaghetti squash in and add everything to a baking dish. Add a generous layer of parmesan cheese and bake until cheese is melted. Then, broil until cheese is browned. Enjoy!
3. Feta, Chicken, Artichoke Spaghetti Squash Bake
I shared this recipe on Instagram and it was a hit! This is a one pan meal which is super convenient (and nice to not have a bunch of dishes!) Grab a large skillet (that is oven safe) and follow these steps!
1. Cook your spaghetti squash – cut in half (microwave first to cut easier) scoop out the seeds, season with olive oil, salt and pepper, turn upside down and bake at 375 for 30-45 minutes.
2. While your spaghetti squash is baking, chop your artichoke hearts into small pieces. Add your feta block to your pan. Cover with artichoke hearts. Season with olive oil, salt, pepper and Italian seasoning. Bake with the spaghetti squash for 25-30 minutes.
3. While all of that is baking, cube and cook your chicken so it’s cooked all the way through. I cooked with olive oil and seasoned with salt and pepper.
4. Once everything is done baking assemble your pan. Smash the feta cheese and mix in with artichokes. Add and mix your chicken.
5. String your spaghetti squash and add to your pan. Mix thoroughly. Add shredded mozzarella on top.
6. Broil until brown on top. (Really watch this! It goes quickly!)
7. Enjoy!!
4. Garlic Parmesan
For this delicious recipe, simply prep your spaghetti squash (instructions above) and scrape out the spaghetti squash strands. In a small sauce pan, add butter and garlic. Sauté until fragrant and starting to brown. Pour the butter and garlic mixture on top of the spaghetti squash strands and sprinkle parmesan cheese on top.
5. Spaghetti Squash in a Cauliflower Alfredo
Everyone love an Alfredo pasta right? I know I do! If you’re subbing regular pasta, for this low carb option, you may also be interested in making a cauliflower based Alfredo sauce. Here is a delicious recipe you can follow! Turn this option into a bake as well by placing it in a baking dish, adding parmesan on top and baking until melted and then broil until browned. Delish!
