The Most Important Meal of the Day

Breakfast truly is the most important meal of the day! In the past, I counted my latte as breakfast. That left me hangry and exhausted because I wasn’t fueling my body properly. Meal prepping breakfast has made it so much easier to get proper nutrients that leave me satisfied and give me the energy for the rest of the day. So what about you? Do you love breakfast or do you skip it? If you skip it, maybe I can change your mind with these breakfast side ideas!

Main Breakfast Dishes

Okay so before we get to the sides, we need a main breakfast dish. (Or maybe you just like a handful sides combined. That’s a great option too!) Sometimes you just need a more hearty breakfast. Right? Here are a breakfast main dish that’s easy to meal prep.

Breakfast Casserole

Breakfast casseroles are SO easy for meal prep and super customizable so you’ll never get sick of them. I like to make a breakfast casserole using a few veggies, maybe a meat and if you’re feeling fancy top it with some tater tots! My go to is zucchini, onions, eggs (obviously), cheese, ground sausage, top with tater tots. Add your favorites to a baking dish. Bake at 350 degrees until your egg is cooked through. Cut into pieces and portion out in your meal prep containers. These are my favorite!

Breakfast Sandwiches

Another main star of your breakfast meal prep could be a breakfast sandwich! Again, super customizable! I like to have egg, cheese, hash browns and avocado on an english muffin. To make this meal an easy meal prep, bake your eggs in a muffin tin to make a round egg patty. Melt some cheese on top, if you’d like! Then, put your sandwich together, wrap it up, stick it in the fridge (or in your meal prep containers). When you’re ready to eat, unwrap, put it in the microwave or toaster oven and add your avocado fresh! Yum!!

Easy Breakfast Ideas for Meal Prep

As a busy mama myself, I get it, sometimes we just need an easy recipe! Well, these are going to be just what you’re looking for! These breakfast side ideas take under 10 minutes to prep for the entire week.

Overnight oats

Not going to lie, I resisted overnight oats for forever because I thought “I wouldn’t like them.” Welp, I was very wrong so if you haven’t tried making this for breakfast, don’t knock it until you try it! You can find a million different ways to make overnight oats on Pinterest but here are a few of my favorites!

Egg Muffins

Egg muffins are literally the same thing as a breakfast casserole but you just cook it in a muffin tin! Combine all your favorite, veggies, meat, eggs, cheese, toppings and bake until cooked through! These are an awesome source of protein (and you can even sneak veggies in for breakfast!)

Fresh Fruit Salad

I don’t know about you but I constantly overlooked fruit for so long. Why? I have no idea because it’s SUCH a great carb that gives you that energy you need in the morning to carry you through the day. Pair it with a protein to keep you full and this is an easy and yummy breakfast side.

Potatoes

Breakfast potatoes are just the perfect side, right? You can use red potatoes, Russet potatoes or sweet potatoes. Just add some olive oil and your favorite seasoning and roast in the oven!

On the Sweet Side

Any sweet tooths?? I sure am! And what’s better than eating dessert for dessert? Eating dessert for breakfast! These breakfast side ideas are going to be such a yummy treat first thing in the day!

Fruit

Again, fruit is such a great naturally sweet food that I think we often overlook. My favorite fruits to have as a side to my breakfast in the morning are strawberries (absolute fav), blueberries, pineapple, pear and apples. Fruit is yummy on it’s own or you can pair it with another breakfast side to complete your meal!

Muffins or Breakfast Breads

Okay, so you can make muffins or breads a million and one ways! Are you a blueberry muffin girl? Maybe you like chocolate chip or double chocolate! Do you like banana bread? What about cinnamon sugar? I absolutely love cinnamon coffee cakes! SO many recipes and ways to satisfy your sweet tooth with muffins.

Overnight Oats

I’m adding overnight oats under sweet options because you can definitely make these a sweet treat! I’ve even used vanilla or chocolate superfood powder to give it an added sweetness while still keeping it healthy. This is my favorite superfood powder!

Healthy Options

For breakfast, I like to have something that is 50% protein and 50% carbs. The carbs give me the energy I need (especially in the morning!) and the protein keeps me full until lunch. Greek Yogurt

Yogurt is a great source of protein and an easy breakfast side you can add to any breakfast you meal prep. Just be aware of added sugars in yogurts so be sure to check the labels. I like Siggi’s yogurt!

Fruit

Mentioning a fruity side dish again, I know, I know! But great carb source that will give you energy and satisfy a sweet craving!

Granola

I recently made my own granola at home and 1. it’s SO easy. (Recipe coming soon!) 2. Simple ingredients and 3. It’s so yummy!! If you’re buying this from the store be sure to check the added sugars here as well.

Overnight or Blended Oats

I’m telling ya.. I slept on these for so long because I figured I wouldn’t like them. Overnight oats are a great carb for breakfast! The other thing you can do is actually blend the oats like a smoothie with your other overnight oat ingredients (I like to use almond milk, maple syrup and fruit, even throw in some chocolate chips!) and leave that blended oat mixture in the fridge. Totally different texture if you don’t like the oat texture.

I mentioned egg muffins earlier in this post but these are a great healthy breakfast idea and a perfect protein addition to your breakfast meal prep!
