Easy Meal Prepping Recipes for Every Meal

Meal prepping will save you SO much time during the week and here’s the thing.. you can meal prep as much or as little as you want! Maybe you want to meal prep every single meal OR maybe you want to just chop your fruits and veggies. Great! Either way, that prep is going to make things easier on you during the day, especially if you’re a busy mama like me!

Easy Meal Prepping Recipes for Breakfast

Fruit

If you want SUPER easy, just cut some fruit! Pair your fruit with some protein and this would be a great breakfast! Even easier, put some into a Tupperware that you can easily grab when you want to eat.

These are my favorite meal prep containers!

Overnight Oats

This are my FAVORITE breakfast right now! SO easy to prep and seriously so yummy!

Ingredients:

  • 1/2 cup Rolled oats
  • Milk (any type – I use oat milk or almond milk) – you want to use enough milk to cover the oats but not make it too soupy
  • 1 tsp Maple syrup
  • Optional – cinnamon
  • Toppings – this really depends on what you like! My fav are berries or apples. I like to add sliced almonds too! You could add banana, other types of fruit, nut butters, get creative!

Recipe:

  • Mix everything together and put it in the fridge to enjoy the next day (or the rest of the week!)

Egg Cups or Breakfast Casserole

This meal prep recipe take a little longer to prep but also a great breakfast option throughout the week!

Ingredients:

  • Eggs

Mixings you could add in!

  • Veggies – onions, bell pepper, zuchinni, mushrooms, tomato
  • Cheese
  • Meat – bacon, sausage, turkey
  • Hashbrowns
  • Tater tots

Recipe:

  • Chop all your veggies and crack your eggs
  • Mix your egg and add whatever seasonings you want
  • Spray your casserole dish or muffin tin so they don’t stick
  • Add your veggies to the dish
  • Pour your eggs over (you’ll want them covering the veggies)
  • Add cheese on top
  • Add tater tots on top of the cheese
  • Bake at 375 until cooked through!

There are so many ways you could make this and never get bored!

Meal Prepping Recipes for Lunch

Salads

Okay there are probably A MILLION ways you could make a salad but let me share some of my favs!

Option 1:

  • Mixed greens
  • Shredded carrots
  • Shredded cabbage
  • Air-fried chicken
  • Sunflower seeds
  • Avocado

Option 2:

  • Mixed greens
  • Sweet potato
  • Apples
  • Grilled Chicken
  • Sunflower seeds
  • Avocado

Option 3:

  • Mixed greens
  • Tuna salad
  • Shredded carrots
  • Sunflower seeds
  • Avocado

Option 4:

  • Head lettuce or Romaine
  • Ground turkey with taco seasoning
  • Grilled onions and peppers
  • Avocado
  • Cilantro

Again, SO many ways to make a salad but hopefully this helps you get started! What are you favorite salads? I try to always incorporate a few different types of veggies, a protein, healthy fat and I just love sunflower seeds for a crunch!

Cauliflower Rice

This is such an easy option to make ahead of time and portion out into containers!

Ingredients:

  • One onion (diced)
  • Peas
  • Shredded carrots
  • Garlic (minced)
  • Cauliflower Rice
  • Chicken (cut really small)
  • Egg

Recipe:

  • Add olive oil to your pan and heat.
  • Sautee garlic and onion
  • Add in frozen peas
  • Add in cauliflower rice and shredded carrots
  • Cook chicken separately and cut into small bites (I like to air fry my chicken!)
  • Push the fried rice mixture to the sides so theres room in the middle. Crack an egg and scramble in the middle.
  • Mix everything together and add your chicken.
  • Season with salt, pepper, soy sauce or coconut aminos

BOS (Bowl of Stuff)

TONS of ways to do this but I’ll share some ideas!

Start with a base:

  • Quinoa
  • Rice (white, brown, wild)
  • Pasta

Add your protein:

  • Chicken
  • Steak
  • Turkey
  • Ground meat (chicken/turkey)
  • Sausage
  • Tuna
  • Salmon

Finish with toppings:

  • Sweet potato
  • Onion
  • Broccoli
  • Zucchini
  • Bell Pepper
  • Cauliflower
  • Brussel Sprouts

Mix it all up in a bowl, season with some salt and pepper and enjoy!

Meal Prepping for Dinner

Personally, I don’t meal prep my dinners. I have a little more time in the evenings and really enjoy making dinners, plus I plan meals but like to mix and match depending on what I’m feeling like SO here are some easy meal prepping ideas for dinner.

I like to get an assortment of veggies and proteins to keep in my fridge for dinners for the week. Then each night, I pick a veggie or two and a protein to go with it.

Some of my favorites:

  • Brussel sprouts and air-fried chicken
  • Artichoke and steak
  • Broccoli and salmon
  • Air-fried cauliflower with a ground turkey tomato sauce
  • Spaghetti squash with shrimp

I also keep stuff in the fridge to whip up an easy salad as a good side dish for dinner.
