My Favorite EASY Healthy Dinner Ideas

There are ALWAYS those nights where you’re super busy or just don’t feel like cooking. WELL you’re in luck because I’m sharing 5 of my favorite easy healthy dinner ideas! Which one will you try first?

1. Cauliflower Fried Rice

Alright SUPER simple and yummy. Trader Joes has “Riced Cauliflower Stir Fry”. You’ll find it in the frozen section at the store. I always have a bag or two of this in my freezer for days that I don’t want to cook or need something quick. I like to add to it to spice it up a bit.. see how below!

Ingredients:
– Trader Joes “Riced Cauliflower Stir Fry”
– Eggs
– Chicken
– Shredded Carrots

Directions:
1. Cube and cook chicken. Brown it with a little olive oil. When cooked, remove from pan.
2. Crack and scramble eggs. Remove from pan once cooked.
3. Heat a tablespoon of olive oil in the pan and get really hot. Add frozen cauliflower rice and cook until hot.
4. Add in a handful of shredded carrots and cook with the rice until soft.
5. Add chicken and egg to rice and stir through.
6. Enjoy!

I like to add potstickers to this meal as well! We find some in the frozen section as well and cook them in the air fryer.

2. Taco Pasta

This dish is so yummy and we always seem to have what we need to make it! It’s also SUPER customizable.

Ingredients:
– Pasta (I like to use spaghetti squash for this or Bonza) If you’re using spaghetti squash and need it for a quick meal one night, cook the spaghetti squash ahead of time (like over the weekend) and save in the fridge until you need it.
– Any taco fixings you enjoy! Like:
– Ground turkey
– Corn
– Beans
– Onions
– Peppers
– Cheese
– Avocado
– Lettuce
– Sour Cream
– Cilantro

Directions:
1. Cook pasta (or spaghetti squash).
2. Cook meat (if using) and soften any veggies you’re using.
3. Add pasta and any warm fixings you’ve prepared to a baking dish.
4. Mix with taco seasoning.
5. Bake at 350 degrees for 15 minutes.
6. Add any other taco ingredients on top (cold toppings).
7. Enjoy!

3. Salmon in the Air Fryer

We always have salmon in our freezer! It’s one of our favorites to make for an easy healthy dinner! I started air frying my salmon right out of the freezer which makes for an even easier meal. No need to wait for it to thaw! I lightly coat the salmon with olive oil, throw some seasoning on (or even just some salt and pepper) and air fry at 400 degrees for 15 minutes!

I like to pair my salmon with some easy veggies like a salad or roasted Brussel sprouts!

4. Cauliflower Pizza

CauliPower has such yummy cauliflower pizza crusts AND already made pizzas! There are lots of other brands too but this one is my favorite. We always have cauliflower pizza crusts (or just Caulipower cheese pizza) in the freezer so we can easily add to it and make our own! A healthy pizza alternative and super quick and easy!

5. Cauliflower Parmesan

I found this recipe from Delish. It’s a play on chicken parmesan BUT uses cauliflower instead of chicken. Nice way to get some extra veggies in! I like to pair this dish with a salad or green beans.
